What's For Dinner?



Here is a easy, simple recipe that my fiancé and I fixed last night. It tasted so great that we are actually fixing it again tonight.

Greek Chicken

Serves 4

Ingredients:
1 Package reduced fat feta cheese
2 cups chopped raw spinach
4 skinless, bonless chicken breast (about 1.5 pounds)
Nonstick cooking spray

Directions:
Preheat oven to 400 degress F. In a large bowl, combine feta and spinach. Cut a small slit in the chicken breast, then use the knife to create a large pocket, making sure not to cut through the chicken breast. Spoon equal amounts of the cheese-spinach mixture inside the pockets made in each breast. Coat a 9x13-inch baking dish with cooking spray and place chicken inside. Bake for around 30 minutes.

45g protein
2g carbs
6g fat

We also added a side salad.

Ingredients:

1 cucumber
1 tomtato
8 kalamata olives
Wish Bone Salad Spritzer (italian vinaigrette)

Directions:

Cut up cucumber and tomato. Cut olives into halves. Place in a large mixing bowl and spray 10 sprays of dressing.
